Heh. I just did the same thing, sorta. I put my four 2TB drives into a Drobo, and attached it to a Mac Mini running Snow Leopard Server (testing the new kitty out). It serves my multiple video watching devices via SMB. It also automatically downloads torrents from my custom TV show feed at http://showrss.karmorra.info — which makes new content pretty painless.
You’ll have to report how well Win7’s media center works.
